ROQUE ANCHOVY
LA MAISON ROQUE CELEBRATES ITS 150 YEARS in 2020. In Collioure, for almost a century and a half, Maison Roque has continued to make anchovies a success, happily and successfully pursuing a reputation for quality. Who doesn't know in France and even beyond, this small, delicate fish, 15 to 20 cm long, called anchovies (engraulis encrasicolus), much appreciated by gourmets and inseparable from Mediterranean cuisine. On its original land, it has remained marked with the seal of the ""Roque"" house since... 1870! Date on which Alphonse Roque established himself as a cooper-salter. In 1922, one of his sons, Léon, took over the business then, in 1969, created the company for his children Renée and Guy: "I learned the trade from my father and we were the first in the 1950s to make, alongside anchovies in salt, fillets in oil" recalls Guy Roque. It was still the time of Catalan boats, lamparo fishing, salting workshops (around twenty until 1945, two companies today), before the trawlers, at the end of the 1960s, took over. the next generation and that the anchovies sometimes arrive from more distant shores. In 2006, Guy passed the company on to his three children, Florent, Armand, and Malou, its president since 2009. This family, very united and invested (5th generation), has made quality and the transmission of its know-how, his credo. "If the different stages of processing are carried out in compliance with tradition (salting, maturation, packaging) and European standards, the company is constantly investing in the search for new products to always improve meet our customers' expectations", recalls Malou Roque. Thus, alongside the four traditional ranges: anchovies in salt, fillets in oil, anchovies in vinegar and "roquerones" (marinated anchovies, a nod to the famous "boquerones"), the latter were available this year in small 150 g glasses to delight even the most gourmands. Anchovy cream and anchoïade are just as popular, without forgetting the stuffed olives. Roque anchovies, we want more! Always manual work, which requires great dexterity. Once matured, the anchovies are processed in two ways, with salt or oil, then packaged in jars or buckets, and seasoned variously. Quality and traceability characterize the manufacturing.
